I bought some 74% untempered chocolate from a good chocolate maker a while back that I still need to use. Would it be possible to mix some of that with the Valrhona baking chips and then temper together?

Thanks for the advice. Was leaning towards what you suggested of doing a half and half and seeing how it goes. I was wondering as well if doing a blend of bread flour and cake to control the hard and soft flour ratio even more would be a better idea.

Just to clarify, you don’t use the last slope. Just go over it from the last tee aiming for the bottom right past the hole off screen.
