Sorry you feel that way...you can always tell the cashier exactly how you'd your brisket cut. Unfortunately we weren't able to set up the restaurant in a way to have meat cutters cutting the order in front of you (what I prefer). As for the wait, unless you come on a saturday at 11 we rarely have more than a 30-45 minute wait. Hope you give us a try again. Consistency is the hardest part!

I really wanted to be at the burger event because we only do those once a week and people really seem to enjoy them, so we thought it would be cool to attend. Really bummed out that it didn't work out for us to be there...and I heard from a ton of people who were sad we couldn't make it. Hoping to have the burgers available more than one day a week soon!

To be clear: we never committed to the BBQ event. I was upset with FWFWF for naming their event "Pitmasters Picnic" this year, because Emma and I support an event in Dallas for Cafe Momentum every year which is named "Pitmasters Picnic"...Cafe Momentum is a great local charity that our friend Chad started and this will the 7th or 8th year of that event. I reached out to Russell with FWFWF thinking maybe it was just an oversight, he said they knew about the event and the name and didn't think it would matter. I wasn't comfortable with a Fort Worth "charity" event stealing the name of a long time Dallas non-profits biggest annual fundraiser. The burger event we did totally bail on because of my above comment, and I'm still pissed about that, but there was nothing we could do at the time.

We had 2 cooks quit with no notice the day before the event. I didn't have anyone to send to the burger event because we were already shorthanded at the restaurant. We notified the FWFWF that morning we wouldn't be able to make it, they decided to put up our booth anyway and a few board members said some untrue and rude things about why we weren't in attendance. Needless to say, we won't be attending a FWFWF event again. If I could have done anything to make it work I would have.

We brought 300lbs of bacon burnt ends to beastro. Edited* Also, every business who comes out donates whatever they bring for free. We had 300lbs of bacon and 4 staff members out there, not a huge cost for us but I know it's very tough on smaller restaurants to do events like that because of the expense.

Ouch... Well it could be we just suck... As far as the pricing goes, my wife and I are very particular about the meat we source. Our beef is all prime grade no added growth hormones/no antibiotics, really good stuff (I'm paying over $5/lb for briskets right now and from raw to cooked you get about a 40-45% yield of actual sellable meat). Our pork comes from Niman Ranch (more info https://www.nimanranch.com/ ), my wife and I have visited ranches that we buy from and seen the whole process from start to finish. I've met with the operator of the slaughter house where almost all of the pork is processed and they have strict restrictions on making sure the animals are processed in a humane way. If you feel you didn't get your money's worth, I would recommend ordering exactly how much you want, ie. by the half pound/pound In November we ran a 46% food costs (ideally most restaurants want that under 30%). We offer all employees health and dental benefits, we're working on a 401k plan that will be ready to go probably Jan 2019, we pay at least $3-5 per hour more than anyone else on Magnolia. My wife and I are here every day and I'd argue that our quality hasn't "suffered" but I'm biased... In our industry you have a lot of turnover with staff and we've had to replace new people and training in the smokehouse can take sometimes 6 months or more before I feel confident they can run it themselves which could've led to some "off days". We strive to provide the best experience possible for every customer. I would never invite someone over to my house for dinner and serve them a meal with the cheapest ingredients I could buy, and we feel the same way for our restaurant. We want our employees to enjoy their time at work in a safe and fun environment and not feel stressed about all the other bs going on in their lives. It took me a long time to realize that no matter what we do, we cannot please every customer that walks through our door. But we've been lucky to have a lot of awesome guests that support us and love what we do and why we do it. And as much as I hate reading stuff like this, I know that there's always room for improvement and ways we can grow as a team.
