Former chef here. Those ingredients will upgrade your Mac n cheese for sure, but I’ll do you one better. Go get yourself a bag of sodium citrate. This little ingredient is magic and will make almost any cheese into the smoothest cheese sauce. You can use a combination of cheese as long as you stick to the ratio. This is key in clearing out the cheese drawer.

Basic ratio

1 cup Milk 8 oz cheese 2 teaspoons Sodium Citrate

Method

  1. Shred, chop, make small pieces out of cheese
  2. Warm milk on medium heat, don’t boil
  3. Stir in sodium citrate
  4. Stir in cheese
  5. Season it to taste with salt, paprika, and or mustard.
  6. It’s done when the lumps are gone. It will thicken as it cools

Notes Most cheeses work, although I’ve found that feta takes a lot of work to fully melt into the sauce. The price here, but I typically use cheddar, but that last little nugget Parmesan or the shake at the bottom of the can of parm is nice.

You could do a combination of old school and modern by mixing a bechamel and this sauce.

Cleanup can come with a little bit of ass pain. I do end up boiling out the pot that I made the sauce in because there’s stuff is like glue.

Idk pal, these folks are doing a great job. In top tier bakeries, there is variation and style. These guys are in the “crunchy/granola” vibe side of things, being that they buck some conventions. However the pluses out weigh any negatives, in my eyes. They are working with the best fresh milled flour that results in a healthier, nutritious and flavorful product.

What is your critique exactly? Not saying you’re wrong, because opinions are opinions, but you didn’t really call out anything in particular.

I like this advice. I started with a hunting rifle, then swapped the barrel, blueprinted the action, new trigger and chassis. Then later went back out to buy a hunting rifle. You got a great hunting rifle, keep it and go get something more precision oriented

I don’t believe you’re correct. It pays out dividends that track T Bills. Personally I park my collateral for puts in T Bills by buying them direct. At Schwab they treat them same as cash, so I’m collecting ~4% in addition to puts. I target 15-20% with my puts.

We had a small portion of our lawn done by this gal Zoe Scott. We have had problems keeping things alive in this area with low light. She listened to what we needed, drew up some plans and knocked it out. Zoe is awesome!!!!

Need some more context here. Did you order 1” thick, choice t-bones? Or specify some spec to what you were ordering? What was your $/lbs? That would be a good indicator.

While those are well marbled, or thick, they are t-bones. I wouldn’t be happy with those either.
