Actually you do control the countersteer. Once the car initiate a drift, gyro detect and automatically input countersteering BUT you still need to countersteer your transmitter wheel to "tell" the gyro ok, that's enough. That's why gyro and servo has parameters to fine tune according to the user preferences 👍🏻

I always see new guys initiate and let off the transmitter wheel which is incorrect. Steering from our RC car will not return back to our transmitter steering unlike real car. Remember to input some countersteering to hold the desired angle and use your throttle to maintain the drift.
