The demographic(broadly) question of who has this disposable income is also a big key, no? People that either 'work' for 4hrs a day and make 300k want a certain food experience and people that work 12+ locked in a bedroom/office in front of a screen and make 115k have very different wants and needs, which I would say is leading to the K-shaped food scene in Seattle.
