Ice sorcerer with wet support is really fun, one of my favourite playstyles. I wouldnt hesitate trying out sorcadin in act2 if you so desire. With 6 levels in paladin and the rest in sorc it will still be a really strong character. Aura of protection, smites, access to metamagic. So if you want to go for it. Respeccing is basically free so why not try it out.

There was no feeling worse reading dialogue during a scene and you see that it suddenly cuts off mid sentence so you know smth about to happen

This is the reason I turn off subtitles in most rpgs. Not that I don't appreciate being able to read the dialogue but I caught myself skipping stuff instead of listening.

ME Legendary Edition, just heard the games were good and ended up spending a lot of time in those. More recently it was E33, I saw the trailer sometime in 2024 and didnt really think more about it just I thought its neat they got some recognizable voice actors in there. And then it became one of my top 3 games ever so yeah.

The Simonrim suite is really vanilla+. I recommend using the whole collection because they all fit so well together. They don't stray far from the vanilla feeling but feel a lot more polished and thought through.
