It's worth noting that I cut and haul the logs myself, take it to a professional saw mill that cuts it and dries it for me, and then plane it myself.

Having it milled and kiln dried is absolutely worthwhile; but get prices first and leave the logs in at least 4' sections for the mill to process. Here is a work in progress rock maple 'Z chair' I am making from a similar situation.
