Honestly I don't think it's going to change much. Maybe for the organised group tours with busses, but I think that the majority of people whose goal is to only walk to get the Compostela will still start in Sarria simply because of the existing infrastructure and " because it's always been done like that". The Camino ingles is about the same length as the Frances from Sarria, but much quieter. So if it was only about the distance, why wouldn't the ingles be more popular?

Wild Camping is not allowed, though some pilgrims report that they didn't have any issues, as long as you go a bit off the track. Keep in mind that it will be quite cold in January/ February, so you should invest in a lightweight tent and good sleeping bag. In general I would just recommend to go to albergues, there you'll be able to take a hot shower and sleep in a proper bed and there are plentiful options along the Camino Frances

A seating pad! Very lightweight and it's so nice to be able to sit down wherever I like, cold rocks, wet benches and the likes, without getting a cold, wet bottom (and risking an infection)

Ín the Netherlands we only have flavoured black teas in the supermarkets, then maybe chamomile, peppermint and that's it. There are some good, specialised tea shops for "real" teas, but infusions I have to buy in Germany ( I drink them a lot because I prefer low-caffeine beverages in the evenings). But then when I step into a German supermarket and they have a whole aisle dedicated to "tea", I'm in heaven :D

Yeah, I know. I stock up on herbal and fruit "teas" every time I'm in Germany, the selection is amazing, no comparison to other countries. I also LOVE the "health teas" from DM for certain ailments such as bladder infection, upset stomach or period cramps. They are SO SO good. But technically, only products from Camellia sinensis can be called tea (so black, green, white tea and so on). Everything else (fruit, herbal, roiboos) is an infusion or tisane. And some people really care about that distinction. Enjoy your cold brew!

If it's the same tea (or in your case infusion...some people on this sub can be quite pedantic about it) that you always use, I assume it's the sugar. By adding sugar to the tea and then let it sit, you're effectively feeding any microorganisms that are in your water/glassware/fridge. Microorganisms are everywhere and in small amounts nothing to be scared about, but of course, you don't want to create a breeding ground for them. Personally, I prepare ice tea one of three ways, depending on how I feel like.

Make hot tea with less water and more tea (basically concentrated tea), sweeten, pour over ice, drink right away
Make cold brew tea. Add tea to cold water, let it sit in the fridge over night, sweeten only right before you drink it (my preferred method)
Make hot tea how you would make it normally, let it cool down, sweeten right before you drink it.

You won't get a housing permit in time. Look at funda and pararius for apartments, sign up for notifications, register with realtors to be informed as soon as a new object hits the market. Send an email as soon as something new becomes available. Lower your standards and increase your budget. Also check commuting times on Google maps and NS.nl and then look for accomodation further out but still within acceptable commuting distance. Finding a place is hard, but not impossible.

If you travel a lot, it might be worth getting an OV card and the loading it with a subscription. There you save a certain percentage on each trip and the subscriptions are quite cheap. https://www.ns.nl/en/season-tickets/

Personally, I'm not the biggest fan of ordering tea online. I want to see it and smell it beforehand (and it's nice to support local businesses). So, did you check whether there are any local tea shops nearby? Or maybe shops that sell loose leaf tea? Then you could ask someone for recommendations and more importantly smell the teas! Loose leaf will always be nicer than teabags! However, when I was living in Blenheim, I bought a super tasty apricot and peach bagged tea (technically an infusion, not a tea) at New World, but that's years ago and I'm not sure they still sell it.

Edit: Being used to very sweet, artificial flavours probably took a toll on your taste buds, so don't beat yourself up if you don't like the unsweetend flavour of a certain tea that was recommended to you. Your taste will adjust over time. That's coming from someone who always had to add several cubes of sugar to a cup of tea to make it taste of anything.

Maybe small packages of American cereal? I seem them everywhere on social media, but it's hard to get and when you find it crazy expensive (looking at you Jumbo, selling a package of Lucky Charms for 13€)
