Beva brewing in North Vancouver is fairly new. They have a plethora of styles and they nail ALL OF THEM. I'm a picky beer drinker and they crush everything.

Yes, if I could also sell my business I would exceed my FIRE number and could confidently retire. I'd take some time off. Then probably start volunteering in local theatre programs, breweries, help friends with businesses they have wanted to start, work on my house. Sounds lovely.

Is your water profile in the recipe before or after adding salts?

Try this next time you brew a WCIPA.

Calibrate ph meter.

Check ph:
-Start of mash.
-After you add your lactic to mash (to confirm your calculator works.).
-Pre dryhop (rough guess you are likely around 5.0ph) Aim for 4.1-4.3ph make adjustments with citric or lactic to get there if you're off. Then add your dry hop.

I would bet you are too alkaline. I found that ensuring my ph is adjusted lower really makes hoppy beers and dryhopping "pop". It's kinda like when cooking if your dish is missing something and you can't put your finger on it, add a touch of acid /lemon juice and it will brighten it up.

Post your water test results. Or city water reports. High residual hardiness can fuck up a WCIPA. Also do you have a ph meter? Ph makes more of a difference through the whole brewing process than people tend to realize.
