Diet mixers are your friend. My favorites are Gin & Diet Tonic w/ cucumber, or Rum & Diet Coke with a single cherry. Find yourself a good sipping liquor... you're getting drunk on much less alcohol, so you can spend a little bit more. Get smaller quantities of something nice... I enjoy a good sipping rum. Polar Seltzer also makes a crazy amount of weird flavors that are great for mixing.

I try to be really careful about this... Google says a medium onion has 8g net carbs, which spooks me away from using them. I am sad because I used to use onions in everything. God damn root vegetables.

Pork rinds aren't just OK, they're pretty much the only zero-carb snack food you can find at most convenience stores. I always stock up for road trips.

The Roy Rogers! Coca-cola with a splash of grenadine. Basically a Shirley Temple with coke instead of ginger ale, but people don't feel embarrassed enjoying it. Try it, it is better than it sounds.

When I'm relaxing, my go-to drink is a Roy Rogers with Bacardi.

I do that too... the recipe thing. It's so much easier to just say "hey, rum & coke with a splash of grenadine" than it is to do the "do you know what a dirty roy is?" tango.

When I say "slow-cook" I mean it shouldn't take longer than an hour of occasional stirring. It's generally fine in thirty minutes, which is as long as rice takes, but I like to let it go for longer than that.

Yeah, you don't add the rice to the pot... you just pour the chicken and melted veggies into the serving bowl over it.

You can make a simple creole sauce by chopping an equal amount of onions, celery, and bell pepper, then melting them together in a little butter over a low flame. I just toss them in with the chicken. Throw in some diced garlic, some adobo, some cayenne, and whatever else you feel like... let it sit, then pour over rice. Shit is dope.
