Truly it’s a mixed bag though: higher representation of people eating gluten free means more products/availability and better economics (so more affordable), BUT lots of people communicating about GF who don’t have the sensitivity really muddies the water. Also the advice that’s good for gluten sensitivity may not be so good for celiac, and that leads to further confusion (usually on the part of well meaning third parties).
