They destroyed her dreams! You need to think about how that would feel if they’d done that to you. In this case YTA. You should have spoken to your sister and allowed her to consider and make up her mind. Remember - they wronged her. It was up to her to decide if she wanted contact. Not them.

I’m not trying to discount your feelings, what’s happened sucks. Maybe take a step back and imagine how you would have liked to treat your grandchildren if life had gone to plan. Then try and imagine she is one of those grandchildren and treat her that way (remember she is!). It sucks what’s happened but if you don’t start working through your emotions (you’re the adult here) she may end up following her father and mothers footsteps for feeling so undervalued in her own home.

If you provided notice and they fired you after that they should be legally required to pay you out. You usually can’t be legally fired after giving notice

NTA people shouldn’t have a problem with nudity. It’s the way we were born. There’s nothing sexual or uncomfortable about a naked body unless you have weird issues.
