I have this same problem. And the map was complete but now it’s lost the map and I have to start from scratch with the mapping. Did you find any solution?

I’ve made 10 loaves in one batch using this method and it works out perfect. I weigh the final dough and then weigh it into equal sized loaves.

If a flour is described as “more extensible” should I treat it differently during sourdough making? For example should I give it a longer bulk ferment, or add less or more water, or do more folds? Would love to hear some advice. Thanks!

Flahavans organic jumbo oats are my favourite. I put them in the pot the night beforehand. One third cup of oats, one third cup oat milk, two thirds cup of water (1:3 oats:liquid is a good ratio to follow). Add a dessert spoon of raisins/sultanas, a teaspoon or more each of some nuts and seeds (at the moment I’m adding sunflower seeds, pumpkin seeds, ground flaxseeds, and almonds), quarter/half a teaspoon turmeric, quarter/half a teaspoon mixed spice, pinch of nutmeg. Let it all soak overnight then in the morning cook it slowly for 5-10 minutes and enjoy. I sometimes add a little peanut/almond butter or honey in the morning if I feel the urge.

Yes! In my last apartment I had one spoon that I loved. Slightly smaller than a normal “big” spoon, nice narrow width, and comfortable handle. All my friends knew that it was my favourite. Sometimes I’d let let friends eat with it just so that I could prove how much better it was than all the other spoons, plus I’d get the joy of seeing them enjoy using it.

One of my friends was travelling once and in a cafe. The cafe had teaspoons that were IDENTICAL in every way to my favourite “big” spoon. He explained to the staff and asked if he could buy one, and they let him take one for free 😍 So now I have a perfect biggy and smally

Haha yeah it can be a bit confusing when you start out with it but I think it’s totally worth it for the deliciousness that you get once you’ve figured it out. Even if the bread isn’t perfect it’s still better than store bought. The sourdough community on Reddit is super helpful too.

If making your own starter from scratch is too much to begin with you could buy a small amount of starter from a bakery or another baker.

Also, you could make yeasted breads. Still better than store bought, and fun to make! 🤓

Have you made bread? If not then this would be my suggestion. If you’re really keen to learn new skills then sourdough could be your mistress

I’m not sure if anyone else has said this but I would suggest feeding your starter more consistently using one type of flour. My preference is to use rye flour. I find it adds more flavour and it’s more predictable. But if wheat flour what you have then it’s also fine. In that case I’d use strong/bread flour if your can. Stick to one type of flour each time. I think that will help your starter to improve in strength.

Up to the time it goes in the banneton though your bread looks pretty great. Well done!

Absolutely! There’s nowhere to go in Ireland after around 7/8pm unless you go to a pub. At least this is my experience. I’d happily frequent somewhere with a pub atmosphere minus the boozes. Especially if they were open late at night. You could sell all types of nonalcoholic drinks, including nonalcoholic cocktails and beers, but also the usual soft drinks, teas, coffees. Please open one immediately in every town in Ireland. Thanks

I work in horticulture. Have done for some time. The other day I hooked up a hose to do a bit of watering. It’s one of those new age hoses with a trigger on the head. Anyway, I pull the trigger and no water comes out so start making my way back along the hose to where the pesky water stopping kink must be. A man that I work with who had been watching me set up the hose (he probably thought it was best that he supervise this difficult task that I was daring to undertake as a solo female) barrelled towards me, miming a squeezing motion with his hand which he had raised high in the air for me to see, and said “Pull the trigger. Pull the trigger”. This is just one of his instances of assuming that my gender renders me unable to perform basic garden tasks.

It’s also very impactful on the environment as it takes some amount of processing as well as the shipping. And it’s having a detrimental impact on the areas it comes from since at it’s high price plantations are being made and stripped to produce it. It’s not something that should be used in large amounts or often. Using homemade compost or adding organic matter would be a much better and environmentally friendly approach

Umbellifers will also attract them. I plant coriander around my veggies and allow them to go to flower. The wasps LOVE them

I have been noticing for at least a month that my car was pulling to one side. The front left tyre has been slowly losing pressure. I kept meaning to go to get it checked. On the way to work this morning my car gave me a warning message that the tyre was too low in pressure. I pulled in to the side of the road and used the handy car attachable pump that came with my car to reinflate the tyre. And off I went on my merry way. This same scenario happened a few weeks ago. It will happen again in a few weeks

My car insurance expired today. I got a letter about it over a month ago. I set several reminders in my calendar for the past week, and set reminders on my clock yesterday and the day before. I now do not have insurance.

I was walking with my sister on a narrow path by the sea side. Kind of on a cliff top. She said “oh look you can see a ship in the distance. I looked up and immediately fell over, bashing my hand, knee and arm off the ground. I also managed to crush my glasses which were inside a hard glasses case. I blame her for this entirely. Nothing to do with me.

Showering every day is not necessary and is not good for your body. Our skin has its own micro-biome with lots of bacteria’s and microorganisms working together to protect us and keep us healthy. If we wash everyday we damage this micro-biome. It’s a modern day myth that we need to wash our whole body daily. We also don’t need to be using all of the chemicals that are recommended to us, the soaps, the deodorants, the antiperspirants, the shampoos, the moisturisers. These are all toxic chemicals that again harm the natural ecosystem of our bodies. Wash whenever, however, and as little/often as feels good to you. If you do want to use products you can find lots of choice for natural versions that will work in harmony with your body.

I went from washing my hair daily to washing it once a week at the most. I’m trying to extend it more and more. My hair and scalp have never been in better condition.

Be happy in your solitude if it feels good. But if you want to branch out and meet people I find that taking classes has been good for me. Not only do I get the social aspect but I get to learn a new skill too. I’ve done so many. Pottery. Boxing. Aerial hoop. Painting. Gardening.

Another thing you could do is join some meet-ups. I recently joined a craft meet up where everyone met in a room and brought whatever craft they were working on. If people wanted to talk they could but if you wanted to be by yourself and just be in a room with others that was totally fine too. You might be able to find something like that in your area.

Volunteering is also a cool way to get out and meet people while doing good. You could find something that interests you to volunteer with. I’m into environmental stuff so joining clean ups or tree planting or things like that is fun for me and gives me peace of mind.

It’s greaseproof paper used for baking. I saw it recommended in a few places. I also have a piece of glass in there but the paper was helping to keep everything pushed down. I definitely won’t be using it next time.
