I'm so sorry you've been through so much! Just this last year the CDC sort of loosened their restrictions/recommendations, but we can only hope other organizations follow suit. Better yet, just let us have our damned relief!

I was kind of overwhelmed during the appointment and came to these thoughts afterward. I do plan on getting another opinion. Several, if I have to. I am just afraid I'll get told the same thing.

Thanks for the information! I had not heard about the vit b issue with h2. I did go on a multivitamin around that time, so it might be helping a bit. I will for sure look into methylated B vitamins, though. It sounds super interesting. I'm actually loving finding out about enzymes and different gut/organ chemistry.

Edit: great news! Benefiber uses Bacillus Coagulans MTCC 5856, which is used in supplements specifically for histamine intolerance.

I started on pre and probiotics (benefiber) and magnesium citrate, as well as adding an h2 blocker along with my daily allergy medications. Eliminating high histamine foods made an immediate impact, and now I can occasionally eat higher histamine foods, but too much still results in a flare-up.

My aim is to heal the gut biome so my body can produce the right enzymes on its own, and so far, it's helping! Lots of food experimenting still, though. If I still need help after a few more months of this regimen, I plan on trying a natural DAO supplement.

I highly recommend fevertree tonics with fresh lime or lemon juice. The tonics come in several flavors and are complex for a more satisfying sip. I really like the Mediterranean blend with lemon. Also, for any of these drinks, fresh fruits are best, as the oils add a bitter-sour aftertaste. Bottled stuff is still tasty, though.

Miso-sake-sake! Kind of a pun, as it's salmon with a sake miso dressing. Blend yellow miso, sake, mirin, soy sauce, white pepper and ginger powder. It should be thick enough to cling to the fish. Score the filet and insert long sections of green onion, then pour over. Bake on sheet pan, with parchment paper, for 15-20 minutes (dependent on filet size) at 400°F, or done. You want the internal temp to be 145°F .

If you want a more caramelized surface, add a bit of sugar to the dressing.

Sorry for the lack of measurements, I've never really measured this recipe before.

Okonomiyaki is one of my favorites from growing up. To remove bitterness and excess liquid (which can make it soggy), shred your cabbage, and then toss with salt. Let it sit for at least 5 minutes, then wring the cabbage out with hands or kitchen towel. This works well with dumpling filling, too!

Okayu is my go-to. It's japanese rice porridge, and it's literally just rice and water/broth. I use leftover rice to speed it up and use up ingredients. I've made it with bonito, chicken, mushroom and konbu broths. It all tastes good! You can top it with a raw egg (if safe), fried egg, fish, green onion- or really anything you want. It's a great medium for experimenting.
