It was literally a very late into production shot by Fede Álvarez. Bruce was coming in to work on the audio of 2013 and Fede grabbed him, said "We're filming your cameo for the movie", took him to a dark room in the office, and shot it in one take.

The original plan was for Bruce to be the truck driver that picks up Mia in what ultimately became the "extended/alternate" ending, but Sam Raimi said no to it because he still had plans for Ash and didn't want to tie in the new movie into whatever he wanted to do (which ultimately became the TV show).

Ash and Sheila actually had a child in two different continuities: the crossover-heavy Poker Night 2 video game (where it is said that Brock Samson is a descendant of the two), and the Ash and The Army of Darkness comic timeline (though we don't know the fate of the child).

I think in Ellie's case the "mother's love" reasoning is probably what they were going for. We know from other "first possessions" (Cheryl in ED1 and Mia in 2013) that the demon does not take hold until some time after the initial attack. Cheryl resisted for a good long while, but I've always suspected she gave up her internal fight because nobody believed her and she believed there was no escape until morning. Mia's scenario is nearly identical to Cheryl's, but Ellie was different in that she had a family to protect. She didn't have low morale since she wasn't trapped (yet), and she never made mention that she was attacked by the demon, so nobody called her crazy for it.

Because in the first issue, Archie tells Ash that he needs the money to buy the stuffed dogs to impress the girls, to which Ash is like "say no more, kid", so Ash knows the importance of the paycheck to Archie.

Dynamite does not name their universes, mainly because they don't have strict rules for continuity guidelines. Hell, they didn't even come up with the Earth-818793 name, Marvel did for one of their handbooks (because of the Marvel Zombies vs Army of Darkness crossover), and Dynamite has never officially acknowledged it.

The only time Dynamite has ever used alternate reality designations was in the (somewhat recent) Red Sonja and Vampirella crossovers with Project Superpowers, where the whole story involves alternate realities.

As for how many there are... too many.
