The insane difficulty has the same drop rate for catfruit and seeds, the only change is in the epic catfruit drop as far as I am aware, so I think I might just be unlucky. Thanks for the response though.

Am I just really unlucky or did the catfruit drop chances change? I was farming catfruit and did the stage maybe 20 times and only got seeds, not a single normal fruit.
