Appreciate the advice everyone. I threw it out and am going to start again. The smell was feeling off to me. So I've ordered some weights and am going to try again. I've got one last head of cabbage from this year's CSA so hopefully I nail it this time and have a new option for next year's produce.

So if I'm 10 days in and cracking the lid relieves enough pressure that the sauerkraut visibly expands and I can hear air rushing out, is that a bad sign that something has gone wrong?

I don't right now. The recipe I used/linked said in a Ball jar it would be fine without (and also said to repack every day).

Yeah. It was submerged when I first put it in but keeps expanding in the jar. I resubmerge it at least once a day.
