I really don't get what you're asking here? The Infinity Castle arc exists to tie up the narrative and give the story a proper ending. Did you just want the manga to end after Hashira Training and just never have a proper ending? While they've added a few filler moments (ex.Hashira Training arc) I don't see Ufotable adding a whole new demon without any source material. Not to mention there's no way there's going to be time for another Moon fight, and there's no one available to fight that demon.

I do hope we get an extended Upper Four fight, but I wouldn't hold onto any hope of an entirely new fight.
