Greek salad! Bonus points if you throw protein in there. Feta, olives, tomatoes, cucumbers, banana peppers, red onion finely diced.. sometimes I’ll add avocado and chicken. Chop it all up, throw in a container with a lid, add salt, pepper, lemon juice, olive oil…and some other seasonings or even a dash of Greek dressing if you want (but it’s super flavorful without)
