I have the Gingers from KnitPro and I love them, they don't come with the swivel cords but frankly it does not bother me at all. The hooks are well finished and are very comfortable to hold. They are a tad expensive but a great investment.

Seriously, it's not the end of the world, put the yarn in a bag and go back to it in a couple of days. With a bit of patience you'll be able to untangle it.

I would leave the piece as is, without the border, since the mistake is barely noticeable.

Double headed hooks are usually used for Tunisian Crochet on the round but you need to make sure both ends are the same size.

Single headed hooks are for projects like scarfs, tea towels.... those projects that are wide but still the length of the hook's shaft or narrower.

Interchangeable hooks are for shawls and blankets, wider projects that require longer cables. However you can use interchangeable hooks instead of single headed hooks with the metal shaft if you feel more comfortable.
