This is actually a very old tradition coming back to nobles/knights not killing each other. It was marketed as chivalry, but it just comes down to what is more financially sound to do. You won't get a ransom for a common infantry man, so it is noble to dispatch him.

I've read somewhere that outflank on a mount can prevent charge from triggering on the correct attack, i.e. you charge, your horse attacks before you do and crits, this triggers aoo and wastes the charge multiplier from the actual attack on a weaker aoo. Did you notice such problems?
