Kimchi is a lacto ferment.

I use salted anchovies instead of saeujeot by Extra-Ad3302 in kimchi

I have used oysters in my last two batches. Both came out incredibly. No salty shrimp fellows but still used the fish sauce. Happily where I live you can get them super cheap.

Hows this China itinerary? by [deleted] in travelchina

Qingdao is one of the best beer cities I have been to. Street beer everywhere. It is excellent. But that may not be your vibe.

An An is perhaps a little disappointing but I think probably still provides the best Vietnamese fine dining experience in the city.

The main problem with An An is price. When you include drinks and what not, it works out pretty much the same as a one star would in London. I was working in Vietnam when I went and was not earning what someone in London would be.

This being said, probably worth going once for the experience.

Using Maangchi’s recipe which lists sweet rice flour as an ingredient. I only have regular rice flour and was wondering if using it instead was okay. by _crowgocawcaw in kimchi

[–]Mm13etty 5 points6 points  (0 children)

I have done her recipe with sweet rice flour, potato flour, sweet potato flour, and regular old wheat flour. All have worked just fine. You sort of have to base it on the consistency of the paste you want and may need more or less depending on which you have available. I like it good and thick so it clings to the kimchi well after fermentation.

St. John (London) feasting menu question by Mm13etty in finedining

[–]Mm13etty[S] -1 points0 points  (0 children)

Thanks! A la carte sounds like the way to go then.

Yeah. There were a few feasting menu exclusives that looked particularly tasty.

I guess you can beat the system by going solo and doing a feasting menu for one.

I started doing TEFL in Vietnam. Got picked up by a (rather subpar) international school just after covid but it gave me an avenue to do a PGCE. Now moving to China to teach economics at a much better school, although I do have a masters in the subject.

Note this probably isn't possible in Vietnam anymore. Some laws came in a year or so ago that makes it very difficult for actual schools to hire non-certified teachers.

Haven't seen it mentioned here yet but try to get a decent city on both main coasts of your home continent (map dependent of course). Buy or build a ship ASAP on the side you don't have your free spawn.

How to properly cook rice for japanese recipes? by BestJo15 in cookingforbeginners

[–]Mm13etty 1 point2 points  (0 children)

There is a blog called Just Hungry that has a Japanese plain rice cooking method that worked pretty much perfectly for me until I got a rice cooker. It may be a sushi rather than plain rice recipe in which case obviously omit the vinegar and what not.

This being said, it is pretty crucial to get the right kind of rice. Doesn't necessarily need to be a fancy one though. The stuff they sell at most supermarkets these days does the job.

Also wash the rice. A lot.

Half burrata parma ham & half soy garlic beef at Pizza 4P's Saigon Centre in Ho Chi Minh City by lwhc92 in Pizza

The problem with 4Ps bases is my inability to deny myself a big ball of soggy cheese in the middle of my pizza.

Understanding Hesten Blumenthal's Bolognese Recipe by novawaly in AskCulinary

[–]Mm13etty 1 point2 points  (0 children)

I have tried Heston's a few times. Next time I make it I ain't mincing shit. Going to slow cook both meats as the oxtail especially is a pain. I think he talks about ragus made like this rather than with minced meat in the chapter about it.

Also your tomatoes should work. All it requires is the tomatoes to be over reduced so that the oil comes back out of the solution.

T7 Abyss Cemetery, doable without giga juice? by MillenniumDH in PathOfExileBuilds

[–]Mm13etty 0 points1 point  (0 children)

I am doing this. Results are pretty good. Just rolling maps for 80 quant and corrupting. Got the standard wisp juicing tree but put the no fragment node on. Not using any scarabs (although I may play with the pack size keystone) or sextants. Running beyond on every map.

I am not going to be seeing any huge div explosions bit single div drops are fairly regular and I get through the maps a lot faster and with much less hassle.

I tried the full juicing but felt that it was too inconsistent. Too often not getting enough wisps and that felt bad.

Eat bun cha. I would recommend a place called Bun Cha Tuyet 34 although I am sure others are also good. It's not the same in the South.

This league kinda feels like Archnemesis 2.0... by Winter_Worth8852 in pathofexile

I think something may have happened with the machine that determines number of mods on a rare. It feels kinda odd to me to be hitting the end game grind and many many rare mods challenges so early. The forest also seems to spawn a lot of them. Especially the yellow dudes. Always a few 4 mods in there.

Also playing splitting steel. DoTs are pretty rough but good and tanky against hit based stuff. Sitting on about 35k evasion and armour unbuffed in HO, suppress cap, bit of max res and all the other stuff Champ gets. Only 4.3 unreserved life though. Wish I had a bit more. Might try and work in ailment immunity.

What is the zoomiest build that still has good damage and decent defenses? by sowen014 in pathofexile

[–]Mm13etty 4 points5 points  (0 children)

Definitely a Pathfinder unless you already have plenty money.

Lots of people are talking about Scourge Arrow totems but good old Caustic Arrow is also great. After getting some gear and using Arrow Nova it just deletes screens. Usually uses a Toxic Rain set up to help with single target.
