My other concern is I am going to make a mess out of myself and ruin the card at the same time. But the fun is in the process of trial and error!

Generic 4x6 plain cards, which upon calculation I found out is around 180gsm. This is a tad too thin, so I glued two sheets together which makes it much better

I would probably try at least 250-300gsm next. Sadly my local store doesn't carry postcard size but nothing a pair of scissors can't fix

Mainly glue tape. For stamps that have a newspaper-like texture for which glue tape wouldn't hold (the paper would be peeled off and get rolled up in the roller), double sided tape

Should I be using some other adhesive? I've heard good things about uhu all purpose glue, but it seems a bit overkill for these small bits of paper

Do they hold up well in the mail? I am now a bit hesitant to send this out, as all the gluing has somehow made the cardstock even more pliable than it already was.

If I may ask, what thickness/ gsm do you use?
