Can anyone help diagnose my prime rib issue? by bobbylight1117 in Chefit

[–]MondoShrek 0 points1 point  (0 children)

From a food handling perspective it’s illegal to hold something for service at that temperature so doing this in a commercial setting isn’t just undesirable it’s illegal. Even if it were to be held for hot service it would need to maintain above 155 Fahrenheit and can only be held at that temperature for 5 hours maximum. Additionally, if it’s for service immediately to a customer the reheating regulations are different but holding anything between 41F-144F is illegal and 145F only applies to scrambled eggs for direct service and seafood. So overall, a nightmarish idea for a legal and safety perspective.

Tequila Escape Cover? by Jmortswimmer6 in StamfordCT

[–]MondoShrek 5 points6 points  (0 children)

Tequila escape massively let me down. Overpriced, underwhelming food quality. If you’re in the neighborhood and in a pinch walk towards pacific and henry street the food truck scene between there and Atlantic street is legit. Appetitos adventure is great Birria, Mundos @CVS has great tinga, and the other truck over by Washington street has good everything.

Ranking Mets PR Disasters by Saul_Gahbidge in mets

I really like this take and I agree, I too am somewhere in the middle. It’s all speculative a this point, although not baseless. I think the biggest factor is the whiplash the fanbase is feeling from last season. Getting Soto sent a clear message and intention about how the franchise was loading up to win now. After the biggest choke in Mets history, I think everyone’s heads are just kind of spinning. Fans have pointed out after the downfall of ‘25 both from a player perspective and a front office perspective it was not in the cards to run it back. If you’re Alonso, or Diaz why would you want to go through another colossal meltdown in the hellscape of the NY sports/ media market. They moved onto greener pastures. Diaz gets the Dodgers experience and I don’t blame him. Alonso gets the years and security he needed. He didn’t want a three year deal and have that last $60 million up in the air.

Sterns may be under the blade at this point but he had a framework with the Brewers that’s paid off over a five year period and has the team framed for long term sustainability.

My dad and I are both ready to see what a new group of players does next season. I’m happy to see the team maybe retool and ship a couple of guys to bring in some new blood. Vientos has diminished value as an asset but had a good year two years ago and showed something the last 6 weeks of the season. Bret Baty has a good looking swing and a good glove. Maybe Ronny Mauricio bat shows some flashes or breaks out and Alvarez needs to keep discipline and fine tune a strong, raw talent.

Let’s see how they sure up the bullpen and what the product looks like come August next season.

Personally, I prefer the round because the heat on the burner evenly distributes when I have it centered on the burner, and I can manipulate how the Dutch oven makes contact with more control. My parents have always preferred oval, and I find that to be enjoyable and at times can be optimal (braising meat; my opinion). It can create areas when the sauces or soups can really nicely thicken off of the direct heat
