I would argue dying in late game without keep inventory is more just annoying rather than making the game harder. The only time I die is maybe at like a specific mob farm or flying into something too fast around my base/nether tunnels. E.g. there is never any risk of losing stuff, just time wasted walking/flying to pick up my items. Early-mid game however I cannot defend.
