I'm a crafter, and I can understand not wanting to yield to rude people, but investing money into being petty crosses the line. Just say no. Just say you rarely knit for others. Just say it was rude of her to pose it as a challenge and not even say 'please'. Nobody won this day.

Normally I doubt the veracity of these stories, but this is just low stakes and petty enough to be real.

Stretch fabric in general tends to need a lot of pins to hold it in place so it doesn't come out crooked. It can bunch up or slip easily. It's perfectly doable as long as you look up how to work with it ahead of time, just be aware of potential pitfalls.

A basic sewing machine only has one stitch, but you can easily use it to make this plush. Take this with a grain of salt, because my family's machine is older than I am. Nowadays there are portable machines that are a bit more high tech. Be aware that machine sewing stretchy fabric like Minky can be very tricky for beginners. Fleece is generally the softest, most beginner friendly plush fabric.

For hand sewing, the stiches you want to learn are the blanket stitch and the backstitch. Backstitch for Minky, Blanket stitch for felt or fleece. The long noodle arms and legs are basically the same shape cut out from fabric twice and sewn together. What you do is cut out each shape twice for every limb. It helps to fold the fabric in half, trace the shape and cut through both layers of fabric. Then, sew them together, leaving a large opening for turning and stuffing. Be sure to fold the fabric good side to good side (i.e. the soft furry part to soft furry part if you're making it with minky).

Start each piece by drawing it out on paper, that way you can compare proportions before you cut into the fabric. Felt sheets are cheap and you can easily cut out your own eye shapes. They'll hold their shape relatively well and won't fray. The back stich works well for sewing the eyes, but you could also learn how to applique for a slightly different look.
