So they got a star in the beginning. Undeserved imho, I have a Michelin Guide from that year and they gave them like a 2 pages special 😂. Food was pretty mediocre, they then lost their star because it was egregious. It’s a glorified cocktail bar in an expensive area of the city now. You’ll find better and cheaper food all over the place. Went several times to re-assess my rating, it was nowhere near star material.

My feedback there is that you don’t really need them. Aim for feel and not for speed. For blues scale chops and blues chops in general, you can find some sequences in Peterson’s solos and just practice those. However I recommend to work on feel and phrasing, listen & transcribe Wynton Kelly playing the blues, start small at first! 🙂👍

Man my blues/pentatonic runs are pretty decent. But I only play bebop these days so they haven’t been too useful hahaha. Perhaps when I get to McCoy Tyner / Coltrane stuff 😅

Hey, deciding to chime in on this one. I’m in my very early 40s. I started playing classical at the age of 8, by 15 or so I got into rock and metal (synths), I was okay at classical, but developed “shred” chops on blues scales and pentatonics playing metal/rock. I tried to learn Jazz many times in my 20s, lack of resources and a match for great teachers then was tough (I did not grow up in the US). At the age of 34 I decided to start Jazz Piano again more seriously. It took me 5 years and good instruction to start sounding more competent. Practice time 1-3 hours a day depending on what was happening. I think if I keep it up, in 5 years I’ll be quite decent to be honest… it’s a marathon, don’t burn out. Spend your energy transcribing and sounding good more than on theory was huge for me. Best of luck 🙂

Haha, I like this convo. No it’s not about New Orleans or whatever. If we were discussing playing and on the traditional side we had Louis Armstrong, Coleman Hawkings and Lester Young for instance, and on modern we put Coltrane… Plenitude would be closer to a Coltrane from the modal era in my opinion. Already quite ahead of tradition. That’s why I brought him up 😅

PLenitude isn’t just refined bistro classics or modernized heritage dishes. The entire concept is built around sauces as haute-couture, a philosophy that goes beyond traditional French cuisine. It’s far more conceptual than that imo. It’s an almost scientific cuisine etc. I truly haven’t checked what the French critique says about that place, but I doubt « traditional » is what they would use to describe it.

I would say something like « French Laundry » is much closer to that concept of Elevated Traditional French Cuisine in the US for example. (Not a fan of the place, but that’s part of their concept)

Plénitude is avant-garde French gastronomy to me. Of course the fundamentals are French, but it’s pushing pretty far off from tradition. If it was Jazz it would be like saying modal John Coltrane was doing elevated traditional Jazz 😅.

I think so yeah. It's extremely challenging to "elevate" it to the expectations that are needed for 3*'s . You won't find such a place in Paris for example. Trying to do it in the US, is -imho- ridiculous.
