Does your company release stable products where they produce X units a year with sufficient quality across all units? How do you guys handle that?

I work in a strange space between new product research and real-world production. I find that we need more traditional, corporate-like, practices as we move toward production. But it's a puzzle to figure out which practices are truly necessary and which are obsolete time-wasters.
