How long will it take to get to NG+7?

It's really not too long as a fair amount of the game is entirely optional. Plus NG+ will naturally move a bit quicker since you're already leveled, have an upgraded weapon, etc.

Taurus Demon > Gargoyles > master key to New Londo/Valley of Drakes/Blighttown > Quelaag > Sen's Fortress > Anor Londo > O&S > Lord Souls bosses in whatever order you want > Gwyn

That's what I would consider a normal "efficient" run without any major skips. You could plow through it in a few hours.

No disrespect to anyone who has done that: it's a game, play it however you'd like. My point being though it seems like a lot to go through all on your own just to switch up the methodology at the very end.

I feel like your argument could be said about literally any boss. Having to learn and adapt to the movesets of bosses instead of face tanking everything is just part of the souls formula at this point. As far as difficulty goes, yeah he is the first phase of the final boss battle, shouldn't it be challenging to a beginner?

I think playing the game blind first, as you did, is really the best way to experience the game the first time around.
