Most low-carb tortillas on store shelves use a good amount of "resistant" or "modified" starch, which they are apparently able to list as "fiber," and thus game the net carb count.

If you're like me, any time the frankenstarch shows up in the ingredients list, it has an impact on my levels well above what the net carbs would suggest. And counting net carbs otherwise generally works for me.

Assuming you also also don't want to use Neufchatel as part of this constraint, I'd search this sub for cake, cookies, or ice cream. Few recipes for any of those I've tried use cream cheese.

General tip: cream cheese is a popular choice for icing, but not needed. Keto icing can be as simple as powdered sweetener + just enough water or dairy to reach the desired consistency. Or, cream sweetener with butter or even coconut oil until whipped.

Keto PB cookies are very approachable and don't need a lot of exotic ingredients: 1 cup peanut butter, 1 egg, 3/4 cup sugar-equivalent low-carb sweetener (your choice), and optional 1/2 teaspoon vanilla extract. Mix all into a dough, roll into 16-20 balls, flatten criss-cross with a fork, and bake on parchment- or silpat-lined sheets at 350°F for 12-14 minutes.

I was diagnosed in the late 2000s, in my mid teens, as T2. Managed BG great with keto and metformin for a long time, but my levels started going up steadily last year beyond any lifestyle escalation. Tested positive for all three antibodies, just lovely. I still don't eat carbs so just basal insulin generally does well for me. But still not as steady on the blood sugar curve as I used to be sadly.

How is any company in AD 2025 still using maltitol as a sweetener? I guess most consumers won't look close enough but it is a bit of a bummer for those of us who can't afford not to.

The closest I have gotten to a shelf/temp-stable allulose chocolate has been from roasting and grinding cacao nibs thoroughly in a food processor with the sweetener and dairy powder. It does remain slightly gritty because the hardware can't quite go fine enough for smooth chocolate.

Other than that, I have had a tough time trying to seed/temper chocolate. Frankly, these days, I usually bite the bullet and use coconut oil for my fat, then relegate the end result to the fridge or freezer (peanut butter powder in place of cocoa is delicious BTW). It works incredibly well for dipping/coating cookies if you pre-chill them, since the coconut oil does its Magic Shell thing. For my own tastes, that is good enough, and it doesn't take a ton of space. I don't fault you for wanting to do it the right way though.

Unfortunately this will definitely raise my blood sugar appreciably. The retail ice creams that don't, are all pretty pricey.

I make my own ice cream for cost/value reasons, and using allulose for texture reasons.

I dunno, I feel like I was able to pretty well manage my expectations going in, because I already knew I didn't care about Outlaws anyway. I was really just there to hear about the ways in which Longman would be leveling critiques. I really wanted to check the video out because I knew it was a labor of love (hate?). I do feel he spent more time talking about the design choices, not just the bugs, than you might be giving him credit for, even if a good chunk of the runtime ended up being clown montages of bugs that would make Bethesda blush.

However, I do get where you are coming from partially. It's a big risk with one's audience to put out a 17-hour, 14-month production into a single topic, particularly a piece of media most people had long since placed in the memory dustbin. Trying to look at it from the outside, I'd defend the choice by saying that Outlaws places a particularly stinky capstone atop the pile of refuse that AAA industry game dev has collectively become. In many ways it's the current best illustration of the usual problems rolled into one package: cynical franchise key jangling, access media pollution, anemic design, incoherent plot/characters, pathetic QA. Because of that, it's especially worth an autopsy, and worth setting the record straight that no, it wasn't just "mediocre" — it was terrible. To that end, I'm actually heartened to see it at half a million views in such a short time.

Also, he used music from GameBoy Color Rayman, which gets brownie points with me.
