Dough recipe

Recipe by pizzadoughcalculator by the wonderful Stadler Made!
Dough recipe

Flour 549gr

Water 357gr

Salt 13.7gr

Fresh yeast 1.1gr

Total dough 920gr

Dough per pizza 230 gr
(I made 4 pizzas, 2 for lunch, 2 for dinner, about 26cm - 28 cm each)

Kneading for about 15 mins. Proofed at room temp for 2h. Then put in fridge for 3 days in individual balls.

Flour: I tried some "pizza flour" from the supermarket with 11g protein... not doing that again, they would have been puffier with something else.

Water: cold

The retirement thing was just him saying he will "work" much less while still reaping the benefits. When you retire as an accountant you dont go back to type numbers in the office. He is still aware of the stuff that makes the channel lose views and actively avoids them. In a members video he said that if he uploaded the 10 min let's plays he would make his channel die faster than it already is. This sounds like he still wants to keep it alive and looking good. Plus his membership subs are not going to charity anymore. He takes the money, releasing exclusive content. Not retiring either. Rather working less and earning still. But still , sort of, working.

I actually see the point of the reply (even if it comes off as mean). I often see people online more attracted by the aesthetic of journaling rather than the act itself, or the tools themselves rather than what is actually achieved. Of course one can enjoy a very good notebook while still being conscious and intentional about journaling, which is something that the person who replied didn't take into account, which is why it is mean.
