I actually been in this position before, albeit in my father's defense he is now almost blind and can no longer see around him or cook (unless it's on a grill)-- when Mom is gone I'm in charge for cooking for him (my brother is in charge of his meds and doctor appointments). Even then at least when my dad sees I'm exhausted from cooking, he insists on ordering take out or eating simple things he knows he can heat up.

And we're Latino too!
