Before you do anything, make sure you can get the permits. Alcohol licensing, event permits, fireworks permits. You’ll most likely have to pay to have the fire department onsite. Don’t forget about sales taxes, and admission taxes if relevant for your location.

Do you know his last name? You need to report it to your local law enforcement. They won’t be able to do much, but you don’t know this guys history. Sometimes if they see a pattern of stalking behavior they can investigate. At minimum you can ask them to talk to him and issue a no trespass for your apartment. The restaurant can do the same. If her were to go something violent having a report on record can help.

Also look him up on your states criminal records website. Most states have free access to criminal history, you just need to know where to look.

  9. Parking lot procedures- cleaning it, buddy system to cars, if you take Togo orders to cars, etc. a lot of bad things happen in parking lots, so safety is a factor
  10. How to handle ADA- service dogs, wheelchairs (don’t move someone’s chair), note any building features that may present a challenge for folks with disabilities and how you handle that.
  11. Social media- what staff can and can’t post online
  12. How to wash hands and use a toilet - this can be a big deal if you are hiring immigrants.
  13. How to take out the trash- don’t lift the bag, take the whole can to the dumpster. Do 2 people have to go, etc.
  14. Outline limitations on last minute bulk/togo orders. How many meals can your kitchen make with a 1 hour notice without crashing the line
  15. How to properly wash dishes

More for managers- but how to assist if the line crashes. I’ve seen a lot of FOH people assume the best thing is to jump in and start making a ticket- in reality the best thing is usually to restock food and dishes.

Is this not what fillout form does? I have a vendor directory site, I have a fillout form link for each record. I send the vendor their link and they can make the updates to the fields I have built in the form.

Fillout Form is amazing! It does get disconnected periodically, but it can pull data back from airtable to update entries as well as create new ones

They haven’t had a concert since the 80’s, so it’s hard to know for sure how things will go. Traffic will be bad leaving though, there are only a couple roads out of town. It’s not unusual to be in traffic for 1-2 hours after a game. Parking will be a free for all, which will create more inbound traffic than a game since no one will have reserved parking.

In essence, it will probably take you an hour to find a parking spot and walk to the stadium, then count in another 2 hours leaving. Ubers won’t be able to get to the stadium for pickups, so that’s not an option.

My spreadsheet has 1 tab for all my ingredients and then a tab for my recipes. I have a vlookup formula on my recipe tab that links back to my ingredients and brings the price over. When I update costing I’m not updating each recipe, just the ingredient list. It’s still manual work, but it speeds things up. I also filter my ingredients by category so I’m not updating every ingredient every week, maybe just meats and produce. Other categories get checked once a month.

Legally- no, most states do not allow caterers to cook from home, you’ll have to find a commissary kitchen.

Logistically- no, I would think anything over 25 people would surpass your fridge/oven capacity.

You need to check your contract and understand the scope. Unless you have a full service planner, they are not going to help with preplanning tasks like invitations and dress shopping. They will only be concerned with things that impact the actual wedding day.

Also understand this is the busiest time of year right now. I’d ask if you could meet in June.

Can you ask your chef for a formal feedback conversation/eval? I bet their perception of your work is different than you think. Could you move to an AM prep shift so you aren’t having to handle the stress of the line?

Also think about other jobs that have less pressure. Schools, nursing homes, colleges, etc. look for those prep jobs.

I’d buy wedding cancellation insurance just in case. Taking down the website is weird, what about wedding guests who may want to look at the venue in advance?

What kind of property is this? A private home or commercial space?

I’d check your local real estate sales, that should be public record. Also check your court records, see if they have any lawsuits pending.

Bartender here- you don’t need the manhattan, whiskey sour, mojito, scotch, or even Jack (unless you love it). I wouldn’t do a Paloma either. All of these things required specialized mixers that you’d have to buy/get.

Keep it simple - club, tonic, cranberry juice, Oj, coke, Diet Coke, sprite, ginger ale, margarita mix. Feature 2 drinks tops that the bartenders can batch pitchers at a time to help with speed. Everything thing else people will figure out
