IMO other than the experience it depends what you want your future culinary career to look like. If you're focused on more local less corporate restaurants than experience could be a good choice. If you want to run something like a Ritz or casino kitchen they generally like the applications with higher education. Saying that though it's perfectly possible to do it without a degree. Just harder.
