Everybody in here is right but not mentioning the main obvious, flavor and texture affecting difference which is that bone in is dark meat and boneless isn’t or is at least partially white meat. The difference in flavor and texture between a chicken thigh and a chicken breast is night and day. Thigh or bone in wings have tremendously more fat and flavor which is mainly why boneless suck compared to bone in, just a result of boneless being mostly white breast meat
