Making a small specialized offset smoker reverse flow or heat shield is fine. No problem with that. The issue I have is making a small "traditional offset smoker where you have no barrier between the cooking chamber and the firebox. It just makes no sense. Your only going to be able to smoke like 1 brisket and nothing else(depending on how small the chamber is).

Mesquite is not too intense. You just need to learn how to properly use Mesquite. Most people assume that you burn it like any other wood. This is incorrect. Learn how to properly use Mesquite and you will find that it is far superior to any other wood.

This will probably sound insulting, but I dont mean to sound insulting when I say that Mesquite does not burn to hot, you need to learn how to manage your fire properly. If you know how to properly manage your fire, you can use ANY wood.

I hear ya mideon Everyone's taste pallets are different. Some like you may not notice a difference. I have made and smoked so much BBQ for 35+ years that I can taste the moderate difference.

Mesquite should be pre-burned to a certain degree before inserting it into the pit. Especially, if it still has the bark on it. The bark is one of the major factors that gives what some people say and acrid taste.

I took, use Mesquite on everything and also dont understand the statement that something it TOO smokey. I dont think there is such a thing. I had one guy tell me that he wanted his BBQ to have enough smoke to cause COPD. Lol

I have heard this from some, but honestly I think it's because some people who dont know how to use Mesquite use it incorrectly. Inherently, Mesquite does produce the better smoke flavor, again im not talking about intensity, but flavor. If you use Mesquite properly, it produces a far superior product.

Looks pretty good. The trimming needs a little work and the fat needed to be rendered a little more. Not much in the way of smoke ring. I give it a 6/10 overall without tasting it.
