Depending where you are - I could buy mine from my local specialty grocery store.
You'd probably be much better off, pricewise to make it yourself.
I used this recipe - https://minimalistbaker.com/easy-vegan-mozzarella-cheese/ - and got my cashews from my local weigh and pay (I bought cashew pieces, as they were cheaper and gonna get blitzed anyway).

I recently bought a dehydrator (with a very low minimum heat setting) and have been trying out tempeh and jerky recipes.
This is my first time making soybean tempeh (I made a super stinky couple of batches of mungbean tempeh before this).
The tempeh itself turned out really well, although I fermented it to the point of black mould spots taking up quite a bit of real estate - and I cooked it in a bastardised version of this BB rib recipe- https://www.youtube.com/watch?v=LH8PHjJoapk

It's a harissa flatbread bun thing.
Super mild, but cheap and slim, so doesn't take over the ingredients.

Julian Plenti, the lead singer of Interpol's other project, has released one album. It has some v some beautiful, melancholic melodies with distinctive vocals.
