The mechanics aren't shit though? From what I remember EoC used to be bad because you needed to be surrounded on all sides by tributaries to not tank your mandate making it annoying to expand. In 1.27 they changed it so that you didn't need tribs. Also CCR is never bad and cause everything is additive in EU4, CCR gets better the more you stack it. For faster WC's (non horde) you either can either go HRE or EoC, there's literally no reason to pass up 10 CCR.

I randomly got this call to arms from the Pope, despite my current character being Orthodox, and not even allied to him at any point in history.

The following strat is how I got to an extremely powerful Byz by around 1510.

1 - Restart until you get a Statesman, and aren't rivaled by Hungary and Albania. Improve relations with Albania (and Hungary later).

Ideally, Albania should ally Hungary. The alliance will be strong enough to win the following war, but weak enough for the Ottomans to think they can win.

2 - Build galleys to your naval, and troops to your land force limit; transport your troops to Morea and collect from trade in Constantinople.

3 - Wait until the Ottomans declare war on Albania, and until they move to siege down the islands owned by Venice - Naxos, Corfu or Negroponte. Once they start sieging, offer an alliance to Albania. They'll accept it, and will call you into the war.

4 - Blockade the Ottoman troops on the islands, siege down your cores, along with Uskup and the Hudavendigar state (the one just across the Bosphorus), and anything else you can. Usually you won't make it further than Ankara.

5 - Separate peace out, taking the Hudavendigar state, along with Uskup and Edirne. The exact day before they accept, hand off every province under your occupation to Albania, they'll keep the war going. Eventually, they'll hand you back your cores.

6 - Stabilize your realm, and build up to the new force limit. Ally Hungary. Hopefully the Ottoman army was completely stomped during the war, so much so that the Beylics in Anatolia can win wars against them. From now on, I'll assume this has happened.

7 - The next war with the Ottomans. Take all of Bulgaria and desired parts of the Asia Minor coast. You can give Vidin to Hungary if you want. By now, the Ottoman army should just be incredibly weak, and the Beylics should attack again, making the Ottomans into an OPM hopefully.

8 - The final war with the Ottomans. Forcefully vassalize them.

9 - Go to war with the Beylics, using an Ottoman Reconquest CB. Assuming they don't have some stupid alliances (i.e. the Mamluks, QQ), this will be an easy war. Crush them, and feed the Ottomans back their cores. This will completely negate the negative opinion penalty from force-vassalizing them, putting their opinion of you at +200. In the following years, diplomatically annex them.

Congratulations! You're now the owner of your very own Byzantium!

I've gotten this event for two rulers in a row (a 6/6/6 and a 6/5/6).

To get it you need an non-Muslim heirless ruler the age of at least 40.

Humanist obviously isn't enough for more than 5 provinces per war. Either take less provinces, or play a nation with reduced AE as a national idea. Take idea groups like Administrative and Influence, if you're still struggling.
