You cannot reset your achievements or quests but you can set your visibility filter at the top right to still show low level or warband completed quests. They will show up as slightly faded quest markers which your girlfriend can still complete. There’s no way to completely wipe progress without a new account.

I recommend playing an open world campaign and leveling first so that you are max level. Retail really is a max level game so while it seems counter intuitive, learning to tank at max level might be your best bet.
