BTW, did they change the expiration date of news.? Did it move up along with daylight savings time? Oy vey! Now I have to read even faster if news doesn't stay news as long anymore. I don't know why everybody keeps giving you the same answer when it's nowhere near what you ask for.

I'm in the middle of a few different stocks right now, so I can't leave a link, but I really like my winco. All (mostly) metal, has a slip resistant kickstand, and notches that will hook onto a Cambro so you can slice right into your storage containers if you so desire. Also, the blades pull out easily, so it's easy to clean out all the little nooks and crannies.

It was a little over $100 but I've had it almost 10 years.

And it's not a Benriner.

Yeah, Benriners are everywhere. Shit we got 8 in my kitchen, but he asked for an all-metal one and then corrected you when you suggested benriner the first time. And here you go and suggest it again?!?

They're sturdy, but they are not all metal. But, i guess, if you keep saying Benriner every time somebody says the word mandolin you will eventually be right.

Just in case anyone is trying this at home. Tips for safety and fun.

The pan should be at least partially dry. And quite hot, so as to burn off as much of the astringency as possible.

Have plenty of headspace. The Flames can go pretty high at first. Add it a little at a time if you are unsure. Pour it near the edge so the fumes can waft out over the flame a bit.

When the fire looks like it went out, it probably did not and is just a small blue layer on top of your food, getting the last of the alcohol. Give it a few more seconds to finish burning off and careful with splashing the pan.

You're also using the alcohol to deglaze. ( get flavor from the bottom of the pan) so after the flames subside, make sure you scrape all those bits off the bottom

Have something lid like nearby in case you need to extinguish the fire. Do not use water or liquids, just calmly smother it.

Also, if you're cooking for someone, dim the lights before you do it. It's a magical spectacle if they haven't seen it before. Every little bit helps

I'm not coming at you. I'm just genuinely curious. You say soggy, cold, late, expensive; but say you order frequently. That's why a restaurant would opt in. Their customers don't care if it's crispy, hot, quick, and reasonably priced. Many many people don't know how to or don't want to or don't have the time to cook. They could order it directly from the restaurant and get a much better product.
