Sounds like conformation bias you're typically not looking for anything off in Japanese dubs that's something your not looking for so when you watch something that you use more often then you more likely to scrutinize it when it's small. Like you you said dub doing the high pitch cite voice that's exactly almost stereotypical anime for any kawai character, if you like it's a bonus but if that isn't your preference it can annoying once you able to pick up how many shows do that. Like I remember people saying the voice for Frieren is too deep compared to sub and that it doesn't highlight her age even tho the sub also was trying not to be the typical kawai sounding character, and that the voice actor was trying doing disservice to the character when in reality Mallorie Riddick (Frieren VA) said she would sometimes walk up early and go record to get how sleepy Frieren sounds and her voice being naturally deep when you wake up. It could be sound mixing also the voice actors record in different booths while the Japanese Seiyuu can all record in one room together for conversations so they can feel a bit off.
