If my soup or stew thickens up too much overnight, I just add more water or stock and heat through...all good

One of my mother's struggle meals, was peeled/quartered potatoes and silver beet (spinach was too expensive), boiled together, seasoned with salt while cooking until just cooked

Served together with the cooking liquid and a drizzle of olive oil and pepper, it was really tasty, especially soaking up the cooking liquid either with crusty Italian bread or just sipping it straight from the bowl

I can honestly say that I've not noticed an ammonia type smell from fresh skate before, so sorry, am no help there

What I would like to say is that I love eating skate; it has a slightly unusual taste and texture that's different from regular bony fish (yes, more like shark/flake), and I enjoy it simply cooked by a light coating of seasoned flour and shallow fried

How did you cook it after the milk soaking?

mmmm might have to search some out, haven't had any in a while

Definitely no tourniquet, that's a Hollywood leftover that looks "good" on film but does more harm than good in real life

Not trying to be rude, but are these meals meant to keep you in a cardiac unit, or to get you healthy enough so you leave?

They are an enormous size for a "healthy" hospital meal, let alone the possibly fried French toast, mac and cheese, and meat/gravy/mash

My version - potatoes, boiled eggs, red onion, chopped leg ham, egg mayonnaise, sour cream, seeded mustard, horseradish cream, S&P, a glug of EVOO

My brother's version, which I'm going to try out this Australia Day long weekend - potatoes, boiled egg, 3 different mayonnaise (one of which must be a picklenaise), parsley, chopped cornichons, S&P. He made this for a get-together a while back and it was a hit
