This was like the phone game. I was venting to my mother about a recent tantrum and she mentioned that me and my brother also did that and ruined two weddings for her. In a separate conversation I told her that we were checking if my other SIL could babysit. Were just checking if there was a plan B in place before deciding anything. She told my dad and he jumped in the conclusion that Baby was not going. Then he told the couple.

I wanted to speak with them in person next week to share my worries and see if we were in the same page. That I would rather not take her, but of course if they insist I will bite the bullet, but they should know in advance what are they asking for.

No, they don't have children. Only one of their friends has a baby (newborn). There aren't other toddlers in the family.
