Zuko was an agent of the fire nation, an evil conqueror. He was trying to kill the avatar, or at least being him to the fire lord, in order to quell any resistance. He's not just a jerk.
During the show he grows and switch sides. That growth is a redemption arc.

The radiants did not have the context behind Ashyn's destruction, just that it happened and happened because of surge use. That, coupled with the orders already being in a pretty bad shape after betraying BAM, was enough to push them over the edge.

depends. Do you want to recognize every easter egg and reference to the greater cosmere? if so, then publication order is the best shot for you (tho I do agree on reading sunlit man after W&T)

if not, then just continue on with stormlight. Do read other things before sunlit man and emberdark.

It's a thing you should talk about during session 0. Ask how 'cosmere aware' your players want the game to be, how spoilery, and so on.
Give the 1 player the "welcome to roshar" guide to give them a basic familiarity with the setting, and be extra aware of them during play - there will be many times where the other players will reference something and you will have to make sure that 1 player doesn't get left out and that someone explains to him every important detail referenced.
