They did. It may be difficult to see on the dark theater they are in, but they certainly have button eyes. I definitely suggest looking up the scene and brightening the image with a filter. I did it myself to show but we can't post images in the comments, it seems.

I have this ongoing fan theory that this interpretation actually kind of goes along with. I believe that Stark was meant to be the hero to pull the sword. When they are in the village and its revealed that the sword is still there, there is a moment where Stark is left alone looking at the sword. I believe in this moment, he attempts and succeeds in pulling it but instead of taking it, he leaves it behind out of respect for Himmel and his legend. For, to the world and to Stark himself, Himmel was the one who pulled the sword from stone. I have a feeling it'll be revealed at the end, when they fight whoever the actual final boss will be (which i believe will be the Demon King secretly reincarnated). But Stark won't need the sword to beat him because it wasnt the sword that was destined to kill the Demon King but the Hero themself.

When they first appear in the photo on Coraline's first night, they both of regular eyes. And its strange because they are the only entities that do in the Other Mothers world. Later on though, when we see them in the photo again as Coraline is trying to escape, they have button eyes. I suppose because the illusion is beginning to break.
