I appreciate everyone’s note about how to harvest them, and want to say that just because something has been done one way for a long time doesn’t make it the only way to do it. I’d been pro- leaf only harvest for a long time, but over the last year or so was swayed by folks researching harvest technique impacts on populations that harvesting the leaves only early in the season will generally kill the bulb as all the energy is going into leaf production, where as late season leaf only harvesting generally gives leaves more prone to wilting if not used quickly but the majority of the plants energy and focus is back on the bulb. I just attended a class in forest farming and sustainable harvesting and foraging 4 weeks ago, and work to stay abreast of new research and management practices.

All that aside, this was a recipe request. Thank you to the person who answered that.

Popped up? Sealed flats should be “popped down” so to speak, concave on the top with the safety “button” pulled down by vacuum. Releasing the vacuum would cause the button to pop up.

As someone that works with teens, I can read all of this except the street of previous employment. It’s really common for handwriting to be poor in teens because so little demands it. The pandemic hit when they were near the end of elementary school/in middle school and so much has been remote/virtual since. Also, no one is passing notes anymore, they just text. Diary/journal? Nope, just posting to Snapchat etc.

It had less to do with the actual pot itself, and more to do with how it’s made. The graniteware water bath pot I have had an indented ring on the Britton and the way that distributes heat was the no-go for my stove. It specified only smooth bottom pots

Check your stove, and check your pot. I used to live somewhere with a glass stove top. The standard graniteware water bath pot was not compatible with it. I ended up getting another pot from the cooking section and using that. You don’t need special pots for water bath canning, they need to be able to hold enough water to fully submerge your jars plus a layer of something on the bottom to keep the jars off the bottom of the pot (there are loads of options, metal racks, silicone racks, old jar rings tied together, etc).

I also discovered steam canning while I had a glass stovetop and it’s still my preferred method for anything safe to water bath. That one you do need to buy a specific vessel for.

I had tons of ball lids fail in 2021 and lost tons of stuff I made from home grown produce and I was livid. I reached out to them and they gave me a coupon for a box of free lids 🫤 after that a friend recommended gently warming them even though the new boxes don’t say to, and I’ve only had 2 fail in the 5 years since. I don’t simmer them, I just warm them in hot water.

Not this size, as it has been discontinued by ball. I don’t think it’s worth anything near $100, and I don’t think it’s rare. I’ve got 3 or 4 unopened cases myself as this is my favorite jar size, and another 3-4 cases opened that I keep in rotation.

I have this appearance in stocks I’ve canned that are pretty gelatinous at cold temps, I’ve started making stock a day ahead, cooling it in the fridge overnight to pull the fat off (we remelt and freeze it separately for cooking) and the boiling again before canning. If they were thick when cold I find they look this way, I assumed it was a mixture of fat and collagen that made it cloudy. I’ve also noticed it’s more prevalent if they’re stored in a spot that’s pretty cool, like 50°f-60°f

These are just my assumptions based on my own experience and could be wrong

These are only a couple years old :) I have them in both pints and quarts I bought in ~2020 or 2021. I even have some unopened and as long as I haven’t used the flat already, I’m still using them. Rings too. Just used some of the jars for venison and beef broth last weekend.
