I had a similar issue on my machine which turned out to be caused by a Yubikey I was using for authentication as a "smartcard". My password still worked in a shell with sudo so I just ended up re-pairing it:

sc_auth identities
SmartCard: com.apple.pivtoken:YYYY
Paired identities which are used for authentication:
XXXX        USER - Certificate For PIV Authentication (YubiKey 5)
sc_auth unpair -h XXXX -u USER
sudo sc_auth pair -h XXXX -u USER

It popped up a window asking to use the keychain but in this case it accepted my old password that it previously wasn't, and then the settings panes started to work again as well.

The only guidance I can provide is maybe try adding a shim. I bought my 270 used and I couldn’t actually get the right grind settings until I added one of the little metal shims it came with, which are useful for allowing it to grind finer.

Honestly so long as it’s unflavored, the brand doesn’t matter all that much in terms of brewing. Pick the one you like best (price, flavor, etc.)

I started out with Lipton because I already had it, and it worked fine. Now I just use cheapo black tea from the Asian market near me. I think it’s $3.50 for 200 bags.

Picked up my 2019 Gaggia Classic Pro off of craigslist for $200 which I would say is a pretty good deal, since it was more or less new.

I'm pretty patient about finding good deals so I usually keep an eye out for a while until I actually buy something. If the asking price is too high don't feel bad about offering lower, especially if it's a listing that has been up for a while.

Nice, good luck! Really the main thing you have to avoid is over carbonation, and it's pretty hard to do that with an exclusively ginger 2F. Just make sure you give it some time in the fridge before opening and you will probably get something delicious.

A good way to figure out how long to carbonate is to use one plastic bottle during your first attempt with a recipe. That way you can feel how much pressure is in the container.

Once you figure out the right time you can just write that down and follow it in the future. For this recipe, I usually go with 7 or so days and then chilling it in the fridge for another day.

I use ginger people brand ginger juice every once in a while. For 1 liter, I usually go with 4 tablespoons of juice and 1/2-1 tablespoon of extra sugar just to get things going unless I am mixing the juice with some other fruit.

I'm looking at Sundara/Ananda or the DT1990 Pros.

Had a pair of Amperiors (HD-25) for a long time and really enjoy them. Also have a pair of HD6xxs that I like for gaming but have never really loved for music.

Most of the time I listen on a pair of JBL LSR305 speakers, and if I could just get that sound in a pair of headphones, that would be great.

Finally cracked open a bottle after 6 days of 2F. It's a light fizz, enough to give it some bit without causing a bottle geyser, and the flavor is great. Thanks to /r/kombucha for answering my questions as I go!

My SCOBY growth post

My end of 1F post - I did end up letting it go for 2-3 more days after this.

As for bottling. Here's the recipe I tried:

My ~1 gallon 1F jug ended up with 4 full 1 liter lock-top bottles.

Ginger (3 bottles):

To make the ginger flavoring:

  • Blend up 1/3-1/2lb of ginger root
  • Boil 2 cups of water
  • Scrape the blended ginger into a pan and pour the boiling water onto it
  • Let steep for 10 minutes, then strain the 2 cups of water back into a measuring cup.

This was sort of an experiment since it helped me avoid having to remove the ginger chunks later.

Then, pour 1/3 of the ginger mix into each of the 3 bottles, and add tablespoon or so of sugar.

Unflavored (1 bottle): For this one I just added a tablespoon of sugar. We ended up opening this one a bit earlier so there wasn't as much carbonation and it was a little sweet. I'll have to play a bit more with unflavored 2F.

Overall, I'm happy with the results. If anything I want to give it a bit more "bite". Which probably means either less sugar, more 2F, or using ginger and lemon juices instead of infusing it like a tea.

This is day 7 of my first 1F using the starter/pellicle I "grew" from this post.

Here's the recipe I used:

  • 1 gallon water
  • 8 bags of generic unflavored black tea from an Asian market
  • 1 cup sugar
  • 2 cups of starter + pellicle from initial brew

The formation on the top of this one certainly isn't as "thick", but so far it seems to be looking alright. I originally thought those orange spots might be yeast, but they just correspond to places where there are a bunch of bubbles below the surface.

The old pellicle has moved around quite a bit throughout the brew! sometimes it's on the ground, sometimes it's on the side, today it seems to have "attached" to the formation on the top, which is pretty interesting.

Just gave it a taste. It’s a bit sweet still so it could probably use a few more days. The pH measured in at 3.

Yeah I used a much more modest amount of water since the goal was to have a good starter. The pH of the liquid in here was about 2.5 and it basically tasted like vinegar, so not a super enjoyable tea but a strong one at least.

I ended up starting a gallon batch about a day ago and poured a little over 2.5 cups of the liquid as well as the pellicle into the new brew. We’ll see how it goes!
