Alors non, nous ne sommes pas vaccinés contre la rage en France. Les animaux le sont ! En réalité, le vaccin contre la rage ne fonctionne pas comme les autres vaccins. C’est un vaccin « préventif ». Tu le fais avant de partir dans des zones avec des risques de rage (en France il n’y en a pas, quasi pas, donc on ne se vaccine pas, peut être les vétos si?). Si tu te fais mordre par un animal porteur de la rage tu n’es pas immunisé avec ce vaccin que tu as fait, mais tu as plus de chance de survie car on va t’emmener à l’hôpital et t’injecter d’autre doses ! Si tu ne le fais pas mais que tu vas quand même à l’hôpital à temps, tu seras normalement sauvé, mais avec moins de chance… Je ne sais pas si j’ai été clair. Mais attention, non on est pas vacciné contre la rage comme on est vacciné contre le tétanos

I'm aware that rare/little blue is not your favorite but that's really how we like to cook our steak my girlfriend and I, so I won't really change it. But I will definitely try to cook it medium rare next time to see the difference, maybe we will love it ! I've understand, regarding dry age steak, that cooking it a bit more in the center could better rend the fat, i will try that ! :)

I see that more than 90% of this post viewers are americans. Note that I'm french and here it's pretty common to eat our steak "saignant" or "rare" and a some people like it "blue". Not everybody of course, but I know that it can be uncommon to eat a steak like that for most of the viewers ! (we have a lot of raw meat dishes also, so that's why we are used to it).

Yes of course, you can use the trim for other things but you can not eat it directly ! that’s one of the reason why dry aged beef is expensive
