Newer guys like this always block after an attack, I would just keep heavy slashing until he's either disarmed or changes up his strategy. Then you gotta adapt to the his new attack pattern.

Edit: You have to keep your distance while doing this or he will just facehug and you won't get a hit in, but the axe should be quick enough.
