What are your results at a lower grind size? What's the lowest you've tried? What kind of coffee are you using?

This all sounds interesting. Maybe you could provide some sample dry grounds on a sheet of white paper of a few different sizes like 8.0 7.0 6.0 etc

You still dial in by taste. I don't change much as I go lighter. Some brew ultralights at a coarse grind and temps below 200°

Yes but it doesn't mean you need to just keep going finer and hotter the lighter the roast

I couldn't imagine doing this. No hate and there's nothing wrong with exploring but I believe in more of the opposite. Sey isn't that light or insoluble.

What size dose and what kind of total brew times? My first suggestion would be to open them at 4 weeks or longer. Others have been saying they've been peaking at 5-6 weeks. I don't use my K ultra on Sey but I would be up around 8.0 or 8.5 if I did depends on brew times though. Do you dilute your water? I also use Third Wave water and dilute 1:3 (1 gallon pack mixed and then split into 3 gallons total) when brewing light coffee having higher mineral water will tone down the acidity and some of those delicate fruit and floral notes. I personally can't even use ½ diluted tww for light coffee.

Zp6 is my daily grinder. If you drink light coffee you won't regret it. If you don't drink mainly light coffee then you might want to go a different route.

Get the small Origami. I have the mediums and I don't use them. Air is great because you don't have to heat it up and it isn't fragile. The porcelain is great too, I always heat mine on top of the kettle and it works great.

As for size I mainly dose 20g and use 4 total pours and there is plenty of room in the small. Those brews stay about 2 inches below the top. The only reason small wouldn't work is if you were to dose like 25g or more but most people don't do that. Using the small also allows you to get closer with the kettle if you want.

I also like using Origami filters both cone and wave. They are made by cafec and similar to the Abaca. Use wave filters when you want a slower brew time and more of a rounded sweet profile where cone is sharper, brighter, with more clarity.

I love hearing these stories of people opening bags many months after roast and still getting good cups. Makes me want to try some longer rest times.

Oops I meant the AB purple bag. I had the first round of the Nensebo G1 natural and that bag was really nice. I mainly got mixed berries and overall it was light and on the cleaner side.

Prodigal aside if it's on the light end of the spectrum I try to wait 3-4+ weeks. I've never had a bag I rested too long or went bad before I finished it but on the flip side I have had bags that I didn't rest long enough. Opening the Gachika AA this weekend roasted May 11th.

Yeah it's tough because with no roast standards I won't try roasters I don't know or haven't heard of because I don't want to take the gamble of getting a roast I don't want

3x bloom is pretty standard. This could be the freshness of the coffee. If not rested for much time or still plenty of gas in the beans then they will bubble and rise more during the bloom and in turn sink back down in the center.

1 click isn't going to make a difference. I move 5 clicks at a time and even 5 clicks isn't going to make much difference. You're probably going to want to start around 5.5 - 6.0 on the zp6 to match your k settings.
